How I Used ChatGPT to Plan Our Week of Dinners

I’ve never been a very organized person when it comes to budget, appointment setting, meal planning - but throw two kids into the mix, and I recently found myself making cheese quesadillas and chicken nuggets for dinner more often than I’d like to admit.

Not that there’s anything wrong with that, but I really do enjoy when my whole family sits down to have a wholesome meal together. And my last-minute decisions about dinner were NOT making that happen for us. I’d end up making a kids’ dinner, and then a couple hours later, making ANOTHER dinner for my husband and myself.

I was burned out on the family dinner thing.

So I decided to make a plan. But I am not very good at making plans - ha!

I didn’t even know where to start, so I turned to AI.

And ChatGPT helped me make the plan.

The prompt I used:

“Help me plan meals for the week. We’re a family of 4: two adults, one 6 year old and one 2 year old. The meals should be healthy, low-carb. Ideally kid-friendly but not necessarily every meal.”

The plan it gave me:

Here's a healthy, low-carb weekly meal plan that’s family-friendly (with a few "adult-forward" options that can easily be adapted for kids):

🍽️ Weekly Meal Plan (Low-Carb & Kid-Adaptable)

Monday

  • Dinner: Grilled chicken thighs with roasted broccoli & cauliflower, side of mashed avocado

    • Kid swap: Add some cheese or ranch dip for veggies, or serve with a small corn tortilla

Tuesday

  • Dinner: Zucchini lasagna (layered with ground turkey, marinara, and mozzarella)

    • Kid tip: Use mini ramekins to make individual lasagna stacks—fun for kids!

Wednesday

  • Dinner: Taco bowls – ground beef or chicken, lettuce, shredded cheese, salsa, sour cream, avocado

    • Kid add-on: Serve with a few tortilla chips or make a deconstructed taco plate

Thursday

  • Dinner: Sheet pan salmon with asparagus and cherry tomatoes

    • Kid-friendly option: Swap salmon for fish sticks or chicken nuggets if needed

Friday

  • Dinner: Cauliflower crust pizza night – let the kids top their own!

    • Family fun: Include toppings like turkey pepperoni, olives, mushrooms, bell peppers

Saturday

  • Dinner: Bunless burger bar with lettuce wraps, pickles, cheese, sautéed onions/mushrooms

    • Kid swap: Offer a mini slider bun or serve as meatballs with dipping sauce

Sunday

  • Dinner: Egg roll in a bowl (ground pork, cabbage, carrots, coconut aminos)

    • Kid-friendly idea: Serve components separately or roll in a low-carb wrap

✅ Easy Side Options

  • Cucumber slices with hummus

  • Mini cheese sticks

  • Berries and Greek yogurt

  • Hard-boiled eggs

  • Steamed edamame
